On the baking side, I attempted again this week to make these muffins. If you recall, I had a slight mishap with them when I went to make this Choc chips muffins with mocha-tic flavor. Nonetheless, I killed them this time and they come out beautifully rose up with a bit crack on top. Soft and cake-y texture along with chocolate and mocha hint. It include brown sugar, coffee, cinnamon and chocolate chips as a core ingredients to shine in with flavors. One thing I love about muffins is that they don't required you to put your electric mixture out and disturb people at home with its noice. Just whisk it up or mix it up, prefer your style and bake these for breakfast or tea-time, these are best either way.
Mocha Chocolate Chips Muffins
makes half dozen medium size muffins.
Ingredients:

Ingredients:
- 1/3 cup whole milk, lake warm
- 1 tsp instant coffee granule
- a pinch cinnamon (or two if you like)
- 1 cup all purpose flour
- 1/2 cup brown sugar
- 1 tsp baking powder
- a pinch salt
- 1 egg, large, room temperature
- 1/4 cup canola oil
- 1/2 cup chocolate chips
Method:
- Start your oven at 350 F. Grease muffin tin or use muffins liners.
- Make the coffee by mixing together warm milk, instant coffee and cinnamon. Keep it aside to cool down sightly.
- Sift the dry ingredients, flour, sugar, baking powder and salt together, twice (important).
- In a mixing bowl mix egg and oil with a fork and add in sifted dry ingredients followed by coffee mixture.
- Mix all together to make a delicious muffins batter. lastly fold into chocolate chips.
- Spoon into prepared muffin tin, 1/2 full. (or 3/4 full if you like high top muffins, which will yield 4 muffins then)
- Bake for 12 to 15 minutes. There should be no batter in the skewer when inserted in the center of the muffins.
