Yeast-less Algerian ka'ak

I've never perfected the art of baking any cookie in this planet ever before. And this cookies? Its all happen last night and I have to blame on MENA Cooking Club for this accident. Thank you Noor for making it possible for us to learn being at home, meet new gorgeous cooks around and sharing the love. For this month we have been given two choices among sweet and savoury recipe by our host Asmaa, to try and share. I choose this Kaak/Cookies to bake. They are Algerian Kaak, north African cookies which is the combo of brioche and cookie together. This usually required to make the cookie dough using yeast as specialist to make it rise.


Yeast-less Algerian ka'ak

This first week of Ramadan has been quite busy for me and taking four kind of medicines three times already suck me out in fasting season. But I didn't let my weakness stop me from baking this gorgeous cookies. So happy I did it and at last success in baking the first perfect cookies in my life. As my  kaak was the last minute thing and I was out of yeast too, so this is yeast-less kaak. (I'm not sure if I killed the whole kaak theory here by making this. Guide me in comments, please.) They were crispy, crunchy and even delicious. I use the idea from this recipe and updated it according to my need.

Yeast-less Algerian ka'ak

Ingredients:
makes 8 cookies

  • 1 eggs
  • 2 tbsp oil
  • 1/3 cup sugar*
  • 1 tsp instant coffee powder
  • 1-1/3 cup all purpose flour
  • 1 tsp baking powder
  • a pinch salt
*you can increase the amount of sugar if you have very sweet tooth.

Method:
  1. Preheat oven350F (180C).
  2. First beat the egg and sugar together to thicken consistency.
  3. Drizzle over oil while beater running.
  4. Add coffee powder, beat well.
  5. Using sifter add flour, baking powder and salt. Fold them gently.
  6. Dough ready.
  7. Using a 1-inch cookie dough scooper or a tablespoon, form even-sized balls of dough; poke in the middle with the handle of a spoon to form a hole and place on a baking sheet. (see the link above for guide)
  8. Bake for 15 minutes or until golden brown.
